Step-by-Step Cooking Instructions

- In a pan add oil, cumin and once it splutters add chopped ginger and green chili.

- Saute and add finely chopped beans, carrots and cook them for 3-4 mins. Now add green peas and toss them for a minute.

- Add salt, turmeric, chili powder, coriander powder, and toss them. Add potato and mix them further, sprinkle chaat masala and garam masala.

- Mash the veggies esp the peas. Remove from heat and let it cool.

Now add in chopped coriander, bread crumbs, grated cheese, and paneer. Mix them well and divide them into smaller portions.

- Shape them into patties about 1.5cm thick. The size of the patty has to be as per the size of the bun.

- In a separate bowl mix flour, salt, pepper, and water to make a thick batter.

Dunk the patty in the batter and then coat them in bread crumbs. Now shallow fry the patty in hot oil on Tawa or you can also deep fry it. Cook on both sides and remove.

- Cut the burger buns from the center, smear butter on the inside and cook them (buttered side) till crisp.

- On the base of the bun smear mustard sauce, place a salad leaf, a dollop of chili mayo, sliced gherkin, then the veg patty, a cheese slice, onion slice, tomato slice, mint mayo and then the top bread of the bun.

- Place a long toothpick from top to the bottom of the burger to hold it together.

For chili mayo, mix together tomato ketchup, mayonnaise, and chili sauce.

For mint mayo, mix together mayonnaise with thick mint chutney.

Serve the burger with French fries or potato wedges.
