Step-by-Step Cooking Instructions
-
1
Prepare the no-oil mayonnaise by blending soaked cashews, paneer, milk, salt, and lemon juice until you achieve a smooth, creamy consistency.
-
2
In a mixing bowl, combine the chopped capsicum, paneer cubes, onion, and tomato.
-
3
Add salt, chilli flakes, oregano, garlic powder, tomato ketchup, and the prepared no-oil mayonnaise to the vegetable mixture and toss well to coat.
-
4
Butter the bread slices on one side. Place a generous portion of the filling on the non-buttered side of a slice.
-
5
Top the filling with grated cheese and cover with another bread slice, buttered side facing out.
-
6
Heat a grill pan or sandwich toaster and grill the sandwiches on medium heat until both sides are golden brown and crispy, and the cheese has melted perfectly.
Chef Kunal's Pro Secret Tip
To ensure your sandwich stays crispy and doesn't get soggy, always ensure your chopped vegetables are patted dry before mixing them with the mayonnaise. Additionally, grill on medium-low heat to allow the heat to penetrate the center, melting the cheese without burning the bread.
Recipe FAQs & Expert Advice
Can I store the no-oil mayonnaise for later use?
Yes, you can store the mayonnaise in an airtight container in the refrigerator for up to 2-3 days. Since it is made with fresh paneer and milk, it is best consumed fresh.
Can I make this vegan or customize the heat level?
To make it vegan, substitute paneer with firm tofu and use almond or soy milk for the mayonnaise. For the heat level, you can adjust the chilli flakes or add finely chopped green chillies for an extra kick.
